Dandelion Salad

Ingredients
In spring, collect the young rosettes of dandelions from meadows or gardens.
The best ones grow in molehills, where the shoots are pale, tender, and not bitter.

 

Preparation
Wash the rosettes and separate them into individual shoots.
Prepare a classic vinaigrette in a salad bowl.
Add the dandelion greens and garnish with slices of hard-boiled egg.

 

Variation
For extra flavor, sauté some bacon bits in a pan and sprinkle over the salad as a garnish.
